Pork Tenderloin and Sides

Here is what I cooked for supper last night. All original recipes and something I do plan to repeat.

Pork Tenderloin
For the pork tenderloin I just put the pork tenderloin in the crockpot. I added a can of Dr. Pepper (which honestly didn't do everything that I had hoped), about two cups of water, and a splash of worchestire sauce. I also covered the tenderloin itself with black pepper and a bit of onion powder. I cooked mine on high for about four hours and then turned it down to warm. When plating the meal I first shredded some of the pork. Then I poured some of the cooked apples over the pork and stirred the apples into the cooked pork. Soooooo good.

Apples
I wanted something to spice up the pork so I decided apples. I cut up two apples (one granny smith and one golden delicious). In a small pot I put about 3 tablespoons of butter and 3 heaping teaspoons of sugar. I allowed the butter to begin to melt then added my cut apples. Cooked on low-medium heat until apples were soft.

Potatoes and Bacon
First I cut up two slices of thick cut bacon. I cooked the bacon (on low-medium heat)  in a dutch oven on top of the stove. Once the fat had began to render off the bacon I added a couple tablespoons of butter and allowed it to melt. I then added a splash of balsamic vinegar. Next I added about five potatoes that I had cut into chunks about the size of a half dollar. I peppered the potatoes and then stirred the sauce and bacon mixture so that it coated the potatoes liberally. I then added about 1/4 cup of water and stirred again. Then I put the lid of the dutch oven and cooked the potatoes at 325 for about an hour (until the potatoes were soft).

Additionally I served the meal with green beans (canned from the garden) and some biscuits.

Introduction

Life is constantly changing and time goes by way to fast. I have heard this well.....all my life. As I grow older I am beginning to understand the truth behind both of these statements.

I am a new mom. I was blessed with a beautiful baby girl just a few short weeks ago. Since I have become a mother I understand that time truly does pass by very quickly. Time is going by so quickly, I want to slow down and treasure all of the moments. Right now I am lucky enough to be a stay at home mom, so I am determined to take advantage of all the special time I have with my daughter.

I am a wife. I have a husband who I love very much. He works very hard so that I can stay home with our daughter while she is young. He is extremely busy with work, and I am busy with our daughter. Somehow we still try to make time for one another. Whether it is shooting bows together or just sitting down to dinner and an episode of House, we are trying to make the most of limited time.

I am (hopefully) a graduate student. I am currently waiting to hear back from my applications to graduate school. I took a year off after receiving my undergraduate degree in English and am excited about getting back into the academic realm.

In addition to being a mom, wife and student I am also many other things: a Christian, a daughter, a granddaughter, a sister, a daughter-in-law, a sister-in-law, and a friend.

I want to share some of the things that work for me as a mom and some of the things my daughter enjoys. I will be moving into our "forever" home soon, and I want to share the ups and downs of moving, decorating, and organizing a home. Additionally, I hope to share some of my experiments in the kitchen. I enjoy cooking and trying new things. Like most people my family is on a budget, so I try to make money go as far as possible.
